chicken cordon bleu casserole

I can't remember where I got this recipe (if it was one you, thank you from the bottom of my heart!), but it's definitely a keeper. Not only is it very easy to whip together, but it tastes heavenly. It calls for diced or shaved ham, but I usually just pile on slices of deli ham and it works just fine. Same with the Swiss cheese -- sometimes I use grated cheese, and sometimes I use deli slices. It all melts together and tastes delicious in the end, no matter what form the ingredients are in when it's assembled.

Chicken Cordon Bleu Casserole
2 1/2 cups uncooked chicken breasts, cut into bite-sized pieces
1/2 lb ham, diced or shaved
1/2 lb Swiss cheese, shredded
1 (10 3/4 oz) can cream of chicken soup, undiluted
1 (8 oz) carton sour cream

Preheat oven to 350 degrees. Line the bottom of an 8x8" baking dish (or something else of comparable dimensions) with the chicken. Top with ham, then sprinkle Swiss cheese evenly over the ham. Mix soup and sour cream together and pour over the casserole. Bake until bubbly, about 1 hour.

Serve with crusty bread to sop up the extra melted cheese. Mmmm-mmm.

First time here, and I will put this in the rotation this weekned. I always wanted to learn how to make it!

Also, I spent some of my time "sprouting" in Indiana.

That sounds divine! I'm trying to devise a plan to make it for me. Hmmm...girl's night, maybe? I just don't think David would go for trying that one. I don't understand how he doesn't like something as wonderful as cheese! I'll figure it out! I've just gotta try it!

This is one of my favorites, we usually have it with bread but served over rice. I also add some Rosemary for a bit more flavor.
